Abstract: Pectin methylesterase (PME) is an important enzyme in food science and technology, since it have different applications in food industry, mainly fruits and vegetables firmness increase, as well as in juice clarification. Its food industry relevance is strongly related to its ability to produce free carboxyl groups in pectin that can interact ionically with divalent cations. Some important characteristics to evaluate prior to use PME are optimal temperature, pH and thermal stability, among others.
