Abstract: Aguamiel is natural sap produced by some species of agave plants, such as Agave salmiana, A. atrovirens or A. angustifolia. It is a product with high concentration of fructose, glucose or sucrose, although its composition may vary depending on the season in which it is produced and may also contain agave fructans (or agavins) or fructooligossacharides (FOS). Fructooligossacharides are small dietery fibers with low caloric value and prebiotic effect, and nowadays are considered natural food ingredients in most world countries because of their multiple beneficial effects in human and animal helath.
