Abstract: Fructosyltransferase (FTase) (EC 2.4.1.9) is an enzyme with biotechnology potential, for this reason the present work was based in the production of FTase by solid state fermentation using agave sap as substrate and a strain of Aspergillus oryzae BM-DIA. Experiments carried out in 60 mL reactors showed that A. oryzae BM-DIA. reached an activity of 1587.38 U/L after 24 h of fermentation.
