Abstract: There is a growing interest in people to improve their health through good nutrition, due to this, nutraceutical products and functional foods have attracted special attention in the development of new products during the last decades (Bitzios et al., 2011). Prebiotics, ingredients used in functional foods, are indigestible by humans and have a positive influence on the host organism by selectively stimulating the growth and / or activity of bacteria or a limited number of bacterial species in the colon; they are substrates for the growth and metabolism of probiotic bacteria.
