Abstract: Edible mushroom fluor Pleurotus ostreatus (HPO) was added as a substitute for refined wheat flour in different concetrations (0, 5, 10, 15 and 20 %) to develop eriched wheat bread. The effects of HPO on the nutritional characteristics, baking performance, digestibility and antioxidant activity of eriched breads of HPO were studied.
