Abstract: The ellagitannins are plant’s second metabolites and its principal function is the protection of the plant against stress situations. The ellagitannins are composed of monomeric units of hexahydroxydiphenic acid (HHDP) bounded to a glucosidic core. When there is a hydrolysis of ellagitannins, these units are released and spontaneously lactonized, which turns in the production of ellagic acid, a compound of great importance because of its diverse reported biological activities, and its use in food and pharmaceutical industry. The present work was done to obtain information about the process of biodegradation of ellagitannins extracted from rambutan peel, and to know which enzymes produced by the fungus Aspegillus niger GH1 by solid-state fermentation are responsible of this process.
